Explosive Flavors in Every Bite: Pani Puri Recipe



Pani Puri, also known as Gol Gappa, is a popular street food from India that is loved for its explosion of flavors and textures. This dish is made up of small, crispy, fried puri shells filled with a mixture of mashed potatoes, chickpeas, and a tangy, spicy water.


To make Pani Puri, you will need:

For the Puri:
  1 cup of all-purpose flour
  1/4 cup of semolina
  1/4 teaspoon of salt
  1/4 teaspoon of ajwain seeds
  1/4 cup of water
  Oil for frying

For the Filling:
  1 cup of boiled and mashed potatoes
  1 cup of boiled chickpeas
  1/2 cup of finely chopped onion
  2 green chilies, finely chopped
  2 tablespoons of tamarind chutney
  2 tablespoons of mint chutney
  Salt and pepper to taste

For the Pani:
  2 cups of water
  2 tablespoons of tamarind paste
  2 tablespoons of mint leaves
  2 green chilies
  1/4 teaspoon of cumin powder
  Salt and pepper to taste




Instructions:

In a mixing bowl, combine the all-purpose flour, semolina, salt, ajwain seeds, and water. Knead the dough until it is smooth and let it rest for 30 minutes.

Roll out small portions of the dough into small circles and deep fry them in oil until they are golden brown.

In a separate mixing bowl, combine the mashed potatoes, chickpeas, chopped onion, green chilies, tamarind chutney, mint chutney, salt, and pepper. Mix well.

In a blender, combine the water, tamarind paste, mint leaves, green chilies, cumin powder, salt, and pepper. Blend until smooth.

To assemble the Pani Puri, make a small hole in the center of the fried puri and fill it with the potato mixture. Dip the puri in the Pani and enjoy the explosion of flavors in your mouth.

Repeat the process with the remaining puris and filling.
