For the Chole (Chickpea curry):
Ingredients:
2 cups chickpeas (soaked overnight)
2 tablespoons oil
1 teaspoon cumin seeds
1 onion, finely chopped
2 tomatoes, finely chopped
2 tablespoons chole masala (store-bought or homemade)
Salt, to taste
1/4 cup chopped cilantro, for garnish
Instructions:

Instructions:
Drain and rinse the soaked chickpeas, and pressure cook them with enough water and a pinch of salt for 3-4 whistles.
In a pan, heat oil and add cumin seeds. Once they start to crackle, add onions and sauté until they turn translucent.
Add tomatoes and cook until they turn mushy.
Add chole masala and cook for a minute.
Add the cooked chickpeas and enough water to get the desired consistency. Let it simmer for 10-15 minutes.
Season with salt and garnish with cilantro.
For the Bhature:
Ingredients:
2 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon sugar
1/2 teaspoon yeast
1/4 cup lukewarm water
Oil for deep frying

Instructions:
In a bowl, mix together flour, salt, sugar, and yeast.
Slowly add lukewarm water and knead to form a soft and smooth dough.
Cover and let the dough rise for 1-2 hours.
Divide the dough into equal-sized balls and roll out each ball into a thick circle.
Heat oil in a deep pan and gently slide the rolled dough into the hot oil.
Fry until golden brown and puffed up.
Drain on paper towels and serve hot with the chole.
Serve the Chole and Bhature together and enjoy the deliciousness of Chole Bhatura. You can also garnish with some chopped coriander and serve with some yogurt or tamarind chutney for a complete meal.
